Preheat the oven to 170 ° C, gas level 3
Cream the sugar and butter together until light and fluffy. Beat in the egg yolk
Sift the flour and add it to the mixture, along with the ginger, cinnamon, currants and pieces of candied orange zest
Add just enough milk to make a stiff dough
Roll out the dough and cut out the cookies with shaped cutters *
Place the cookies on a greased or non-stick baking sheet and bake for 15 minutes
Remove the cookies from the oven and brush with the egg white
Prepare the incing sugar with warm water (follow pack instructions)
Decorate the cookies with shapes using the icing sugar and edible colouring
Bake for another 5-10 minutes
