100 grams soft goat's or cream cheese
3 fresh chives stems, finely chopped
1 teaspoon good olive oil
1 teaspoon Dijon mustard
pinch of dried chili flakes
1 clove minced garlic
freshly milled pepper to taste
optional:
whipping cream or
full Jersey cream milk
warm crusty French baguette or
cream crackers or water biscuits
to drink: dry white wine
Mix everything with a hand blender until you get a homogeneous mixture without lumps.
If the mixture is too thick, add the cream bit by bit.
Let the mixture stand in the fridge for a few hours for the flavours to mix.
Before serving place the baguette in an oven to warm through.
Garnish on top with some sprigs or cut chives.
Serve with a spoon on pieces of the French baguette or biscuits
And serve with a chilled glass of dry white wine.
Alternatively one can vary the herbs and use chopped tarragon or dill.
